Homemade Pizza Bread with Fresh Basil and Mozzerella

Serves 2 / Calories per serving = 400 approx

Ingredients:

  • homemade pizza bread2 medium-thick slices of seeded white bloomer loaf (about ¾ inch)
  • 125g ball of low-fat mozzerella, drained and sliced thinly
  • 2 teaspoons of tomato puree
  • 2 small tomatoes, sliced
  • 2 large closed-cup mushrooms, sliced
  • ½ small onion, sliced
  • ½ small orange bell pepper, sliced
  • 2 slices of ham, chopped
  • several fresh basil leaves, torn roughly (or 1 teaspoon of dried basil)
  • 1 tablespoon of grated parmesan
  • salt and pepper to taste

Method:

  1. Pre-heat the oven to Gas Mark 5 / 190 C.
  2. Place the slices of bread on a large baking tray and bake in the oven for 5 minutes - just long enough to dry it out but not to turn it brown.
  3. Remove the bread from the oven and spread on the tomato puree with a few slices of mozzerella - leave just over half the mozzerella for pizza tops.
  4. Layer on the tomatoes, mushrooms, onion, pepper, ham and basil and cover with the remaining mozerella slices.
  5. Sprinkle the parmesan over the very top and finish with a little extra seasoning.
  6. Bake in the oven for a further 20 minutes until lightly golden.
  7. Serve on its own or with a large mixed salad; Chopped tomato and cucumber with fresh basil, salt and balsamic vinegar works particularly well.
