Cheesy Ham and Sweet Potato Omlette

Serves 2 / Calories per serving = 350 approx


  • cheesy ham sweet potato omlette2 medium-small sweet potatoes (200g), peeled and diced
  • ½ red bell pepper, sliced
  • 4 slices of ham, chopped
  • 4 spring onions, chopped
  • 1 tablespoon of olive oil
  • 2 Dairylea Light cheese triangles
  • 4 eggs
  • a splash of milk
  • salt and pepper to taste


  1. Simmer the sweet potatoes in a saucepan of boiling water for 10-12 minutes, until cooked through but still firm.
  2. Heat ½ the oil in a frying pan and fry the ham pieces over a moderate heat for a few minutes until very lightly brown. Stir frequently.
  3. Add the pepper to the frying pan and fry for a further 3-5 minutes. Stir frequently.
  4. Meanwhile, whisk the eggs, milk and seasoning in a bowl and put to one side.
  5. Drain the sweet potatoes and add to the frying pan, along with the remaining oil, and fry for a few minutes. Stir frequently.
  6. Turn the heat down low and pour the egg mixture evenly over the sweet potatoes, ham and pepper.
  7. Quickly add the spring onions and small blobs of the Dairylea Light cheese evenly over the top of the ommlette.
  8. After a few minutes, lift up the edges of the omlette and allow some of the uncooked egg mixture to run underneath.
  9. When the bottom of the omlette is a light golden brown, remove from the stove and put under a hot grill for 3-5 minutes until the top is set and lightly browned too.
  10. Cut the omlette in half and serve as is or with a mixed salad.
