Mum's Chicken Dinner with Thyme Gravy

Published: May 26th, 2011 / Last updated: January 1st, 1970

Serves 2 / Calories per serving = 400 approx

Ingredients:

  • chicken dinner with thyme gravy2 medium skinless chicken breast fillets
  • 4 small Jersey Royal potatoes (200g), scrubbed and cut into chunks
    (any other small potato is fine though)
  • 2 handfuls of fine green beans, trimmed
  • 2 handfuls of chantenay carrots
  • 2 handfuls of garden peas
  • 2 rounded teaspoons of Bisto gravy granules + 100ml boiling water
  • a pinch of thyme

Method:

  1. Pre-heat the oven to Gas Mark 5 / 190 C.
  2. Wrap the chicken breasts loosely in foil, place on a baking tray and bake for 25 minutes.
  3. Simmer the potatoes in a saucepan of boiling water for 15-18 minutes, until cooked through.
  4. Simmer the green beans and carrots in a 2nd saucepan of boiling water for 10-12 minutes, until softened slightly.
  5. Add the peas to the pan of veg and simmer for 8-10 minutes. All veg should be timed to finished cooking together.
  6. With a minute to go, make 100ml of instant gravy as directed on the packaging, adding the thyme and stirring well.
  7. Remove the chicken from the oven and unwrap and strain all the veg before serving with the gravy.
