Courgette Carbonara with Tagliatelle

Serves 2 / Calories per serving = 450 approx


  • courgette carbonara4 slices of lean ham, chopped (sandwich meat)
  • 1 teaspoon olive oil
  • 2 small courgettes (zucchinis) 
  • 1 orange bell pepper, sliced 
  • 6 medium button mushrooms, sliced
  • A pinch of thyme
  • 2 egg yolks
  • 2 level tablespoons of grated parmesan
  • 2 tablespoons of low-fat cream alternative (such as Elmlea)
  • salt and pepper to taste
  • 2 small fist-sized servings of fresh Tagliatelle pasta


  1. Fry the ham in the oil over a medium heat for about 5 minutes or until golden brown. Turn out onto a plate and put to one side until later.
  2. Slice the courgettes lengthwise into quarters (4 long skinny strips) and cut out a thin slither of the core (down their lengths). Discard the core. Slice the remaining courgette ribbons diagonally into 2 inch pieces and add to the frying pan. The pan should still be slightly moist with oil. You should not need to add any more oil as the courgettes will release some of their own juices. Fry for a few minutes to let them soften very slightly and take on some of the remaining ham flavour.
  3. Add the pepper to the frying pan along with the courgettes. Fry for about 5-7 minutes, stirring frequently, until the pepper has softened.
  4. Add the mushrooms to the frying pan. Return the ham to the frying pan too. Also add the seasoning and thyme and fry for a further 3-5 minutes.
  5. Meanwhile, put the tagliatelle into a large saucepan of boiling water and simmer for about 4 minutes or until cooked (fresh pasta cooks very quickly)
  6. Lightly whisk the egg yolks with the grated parmesan and cream in a bowl.
  7. Take the frying pan and saucepan off the heat and then quickly strain the pasta but don't strain it too much as we need it wet for the sauce. Return it to the saucepan.
  8. Tip the eggy-cheese mixture into the slightly cooled frying pan of veg (it needed to cool slightly so the eggs didn't scramble). Stir briefly.
  9. Tip the contents of the frying pan into the saucepan of pasta and again stir briefly before serving.
